Gluten-free Meyer Lemon Cake

























Cake
  • 4 oz. Arnel's Originals Make-a-Cake Your Way cake mix
  • Juice from one Meyer Lemon
  • Peel from one Meyer Lemon
  • Spray cake pans cooking spray and pre-heat oven to 350ยบ
  • Cane sugar (as needed)
  • Agave Syrup (as needed)
  • Beat wet ingredients for one minute and add to the dry mix.
  • Beat everything together for one more minute. Pour batter into cake pans and bake 30 to 35 minutes
Icing
  • 1/4 cup confectioner sugar
  • 1/2 teaspoon almond milk (water works well too)
  • Mix sugar with almond milk
  • Add mixture to a small baggie
  • Snip off one corner of baggie and dribble icing onto cake
