Gluten Free and missing good bread? Finally, a solution!

Just made yummy gluten free corn bread. Here's the recipe: 2/3 cup milk substitute 1 tablespoon apple cider vinegar 3/4 cup gluten free all purpose flour (or 2/3 cup brown rice flour, 4 tab. potato starch, 2 tab. tapioca flour) 1/2 cup corn meal (course) 1/2 cup corn flour (fine) 2 tea. baking powder 1 tea. baking soda 2 tea. xanthan gum 1 tea. sea salt 1/2 cup expeller pressed oil 1/3 cup agave nectar 1/3 cup applesauce
350* for 35 min. in an oiled medium loaf pan
Pour "milk" and vinegar in a bowl and let it sit. This will be your "buttermilk" In another bowl mix all the dry ingredients and then combine it with all the wet except the "buttermilk" Pour in the "buttermilk" and mix gently. Pour batter in a prepared pan and bake on center rack 325* for 35 min. Remove and let it set for 20 min. ENJOY!
